Ingredients:
4 cups / 280g Shredded Green Cabbage (or a mix)
2 cups / 240g Shredded Carrots
3 Scallions, thinly sliced
1/2 cup / 20g Fresh Cilantro, chopped
For the Creamy Peanut Sauce:
1/3 cup / 85g Creamy Peanut Butter
1/4 cup / 60ml Warm Water (or light Coconut Milk)
2 tbsp / 30ml Lime Juice
2 tbsp / 30ml Soy Sauce (use Tamari for Gluten-Free)
1 tbsp / 15ml Maple Syrup or Agave Nectar
1 tsp / 5g Grated Fresh Ginger (optional)
Optional Topping: Chopped Peanuts
Directions:
1. In a large bowl, combine the shredded cabbage, shredded carrots, and sliced scallions.
2. Prepare the peanut sauce: In a separate medium bowl, whisk together the peanut butter, warm water (or coconut milk), lime juice, soy sauce, maple syrup (or agave), and optional ginger until very smooth and creamy. Add a little more warm water if needed to reach a pourable, creamy consistency.
3. Pour the creamy peanut sauce over the cabbage and carrot mixture.
4. Add the chopped cilantro.
5. Toss everything together until the vegetables are thoroughly coated in the sauce.
6. Garnish with chopped peanuts just before serving, if desired.
7. Serve immediately or chill for 15-20 minutes before serving.
