Thai Chicken Meatballs in Coconut Curry
Ingredients:
1 lb ground chicken
1/4 cup breadcrumbs
1/4 cup fresh cilantro, chopped
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1/2 teaspoon red pepper flakes (adjust to taste)
1 can (13.5 oz) coconut milk
1 tablespoon red curry paste
1 tablespoon soy sauce
1 tablespoon brown sugar
Salt and pepper to taste
Lime wedges and cilantro for garnish (optional)
Directions:
Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, cilantro, fish sauce, lime juice, garlic, ginger, red pepper flakes, salt, and pepper. Mix until well combined. Form the mixture into small meatballs, about 1 inch in diameter.
Cook the Meatballs: In a large skillet over medium heat, add a splash of oil. Once hot, add the meatballs in batches, cooking until browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside.
Make the Curry Sauce: In the same skillet, add the coconut milk, red curry paste, soy sauce, and brown sugar. Stir well to combine and bring to a simmer.
Combine and Simmer: Return the meatballs to the skillet, gently nestling them into the curry sauce. Cover and let simmer for 10-15 minutes, allowing the flavors to meld and the meatballs to cook through.
Garnish and Serve: Remove from heat and garnish with lime wedges and additional cilantro if desired. Serve warm over rice or noodles, and enjoy this comforting and flavorful dish!
