Pineapple Fried Rice

Ingredients:

3 cups cooked rice, preferably jasmine or long-grain
1 cup pineapple chunks, fresh or canned
1/2 cup cooked chicken, diced (optional)
1/2 cup cooked shrimp, peeled and deveined (optional)
1/2 cup frozen peas, thawed
1/2 cup carrot, diced
2 cloves garlic, minced
2 tablespoons vegetable oil
2 eggs, beaten
3 tablespoons soy sauce
1 tablespoon fish sauce (optional)
1 tablespoon oyster sauce (optional)
1 tablespoon sesame oil
Salt and pepper, to taste
Green onions, chopped, for garnish
Directions:

Heat vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and diced carrots to the skillet and stir-fry for 1-2 minutes, or until the carrots are slightly softened.
Push the carrots to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through, then mix with the carrots.
Add cooked chicken and shrimp to the skillet, if using, and stir-fry for another minute.
Stir in cooked rice, pineapple chunks, thawed peas, soy sauce, fish sauce, oyster sauce (if using), and sesame oil. Mix well to combine all the ingredients.
Continue to stir-fry the rice mixture for 3-4 minutes, or until heated through and evenly coated with the sauce.
Season with salt and pepper to taste, if needed.
Remove the skillet from the heat and garnish with chopped green onions.
Serve the pineapple fried rice hot as a main dish or side dish.
