Lemon Butter Fish Bowls with Herbed Rice
Ingredients:
For the Fish:
1 pound boneless, skinless fish fillets (such as cod, halibut, or tilapia)
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Herbed Rice:
1 cup rice
2 cups water or vegetable broth
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
For the Lemon Butter Sauce:
1/4 cup butter
2 tablespoons lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions:
Cook the Rice: In a medium saucepan, combine rice, water or vegetable broth, oregano, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed. Fluff with a fork and set aside.
Grill the Fish: Preheat grill to medium-high heat. Season the fish with garlic powder, onion powder, salt, and pepper. Grill the fish for 3-5 minutes per side, or until cooked through.
Make the Lemon Butter Sauce: In a small saucepan, melt butter over medium heat. Add garlic, lemon juice, salt, and pepper. Cook for 1-2 minutes, or until the sauce is smooth and creamy.
Assemble the Bowls: Divide the cooked rice among bowls. Top with grilled fish and drizzle generously with the Lemon Butter Sauce. Garnish with chopped parsley.
Tips:
You can use any type of fish you like for this recipe.
For a spicier sauce, add a pinch of red pepper flakes to the Lemon Butter Sauce.
Serve the bowls with your favorite side dishes, such as a green salad or a side of roasted vegetables.
