For the Lemon Chicken with Sauce 🍗🍋
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 garlic clove, minced
Juice of ½ lemon
1 tsp lemon zest
Salt & black pepper to taste
2 tbsp plain yogurt or sour cream
1 tsp mayonnaise (optional, for richness)
1 tsp honey or agave syrup
For the Roasted Potatoes 🥔
2 large potatoes, peeled and cubed
1 tbsp olive oil
½ tsp paprika
Salt & pepper
For the Buttered Rice 🍚
1 cup basmati rice
1 ¾ cups water
1 tsp butter
Salt to taste
For the Mixed Vegetables 🥦🥕
½ zucchini, sliced
1 carrot, julienned
½ cup broccoli florets
¼ cup cabbage or napa cabbage, chopped
1 tsp butter or neutral oil
Salt & pepper
To Garnish 🍋
2–3 lemon slices
Fresh herbs like parsley (optional)
👨🍳 Instructions:
Preheat the oven to 200°C (390°F). Toss the potato cubes with olive oil, paprika, salt, and pepper. Roast on a baking tray for about 30 minutes, or until golden and crispy.
Cook the rice: Rinse the basmati rice until the water runs clear. In a saucepan, combine rice, water, butter, and a pinch of salt. Bring to a boil, cover, reduce heat, and simmer for 15 minutes. Let it rest for 5 minutes before fluffing.
Grill the chicken: Coat the chicken with olive oil, garlic, lemon juice, zest, salt, and pepper. Grill over medium heat for 5–6 minutes per side until fully cooked through (internal temp should reach 165°F / 74°C).
Make the lemon sauce: Whisk together yogurt, lemon juice, honey, and mayonnaise (if using) until smooth. Chill until ready to serve.
Cook the vegetables: Heat butter or oil in a pan. Sauté zucchini, carrots, broccoli, and cabbage for 4–5 minutes until tender but still vibrant. Season with salt and pepper.
Plate it up: Mold the rice on each plate. Slice the grilled chicken and drizzle with the lemon sauce. Add the roasted potatoes, sautéed vegetables, and lemon slices for garnish.
Tips & Variations:
Add a clove of garlic to the sauce for extra flavor.
Swap out broccoli for green beans or snap peas.
For a lighter dish, omit the potatoes and double the veggies.
