🥜 Peanut Butter Cheesecake Donut Sandwiches 🍩
Ingredients:

4 large, soft chocolate-glazed yeast donuts (fresh is best)
½ cup (130g) smooth or chunky peanut butter (divided)
8 ounces (225g) full-fat cream cheese, softened to room temperature
½ cup powdered sugar, sifted
1 teaspoon vanilla extract
½ cup Reese’s Peanut Butter Cups, finely chopped (plus extra for garnish)
For the Drizzle:
¼ cup (65g) peanut butter
2 tablespoons whole milk or heavy cream
Instructions:

Make the Filling: In a medium bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and lump-free, about 1 minute. Add the sifted powdered sugar and vanilla extract. Beat on low speed until combined, then increase to medium-high and beat for another 1-2 minutes until light and fluffy. Using a spatula, gently fold in the ½ cup of chopped Reese’s cups. Cover the bowl and refrigerate for at least 30 minutes to firm up.
Prep the Donuts: Using a serrated knife, carefully slice each donut horizontally in half, creating a top and bottom “bun.” Place the bottom halves on a serving platter or parchment-lined baking sheet.
Build the Sandwiches: Spread a thin, even layer (about 1 tablespoon) of peanut butter onto the cut side of each donut bottom. Remove the cheesecake filling from the fridge. Using a piping bag fitted with a large round tip, or a spoon, generously mound the chilled filling onto the peanut butter layer.
Cap & Chill: Gently place the top half of each donut back on the filling, pressing down lightly to adhere. For cleaner slices and a firmer texture, place the assembled sandwiches in the refrigerator for 15 minutes.
Make the Drizzle: In a small microwave-safe bowl, combine the ¼ cup peanut butter and milk. Microwave in 15-second bursts, stirring well between each, until the mixture is smooth, warm, and pourable (about 30-45 seconds total). Alternatively, warm gently in a small saucepan over low heat.
Serve with Flair: Remove the donut sandwiches from the fridge. Drizzle the warm peanut butter mixture generously over the tops. Immediately garnish with additional chopped Reese’s cups for maximum crunch and visual appeal. Serve immediately.
