Ingredients:
2 boneless, skinless chicken breasts
1/4 cup honey
1/4 cup chipotle sauce
2 cups cooked rice
1 cup corn kernels (fresh, canned, or frozen)
1 avocado, diced
1 jalapeño, sliced
1 lime, sliced into wedges
Fresh cilantro, chopped
Salt and pepper, to taste
Olive oil for cooking
Sour cream or Greek yogurt for drizzling
Instructions:
Marinate the Chicken:
In a bowl, mix the honey and chipotle sauce.
Season the chicken breasts with salt and pepper.
Pour half of the honey-chipotle mixture over the chicken, coating it well. Let it marinate for at least 30 minutes.
Cook the Chicken:
