My first go at a meatless meal. I'm not quite vegetarian yet but baby steps (trying for 4 nights completely vegetarian a week) grilled zucchini and squash, roasted brussel sprouts and cauliflower w/rosemary and thyme, wild rice, and black beans for some protein. Is this an OK substantial meal for vegetarian? Lunch was cucumber, sea salt pita chips and everything bagel hummus.
