Ingredients:
For the Chicken:
2 boneless chicken breasts, sliced 🍗
1 tbsp olive oil 🫒
1 tsp garlic powder
Salt & black pepper to taste
1 tsp lemon juice 🍋
Chopped parsley (for garnish) 🌿
For the Bowl:
1 cup cooked brown or white rice 🍚
½ cucumber, thinly sliced 🥒
4–6 lettuce leaves 🥬
Instructions:
Marinate the chicken: In a bowl, toss chicken slices with olive oil, garlic powder, salt, pepper, and lemon juice. Let it marinate for 10 minutes.
Grill the chicken: Heat a grill pan or skillet over medium heat. Grill the chicken for about 5–6 minutes per side until golden and cooked through.
Prepare the rice: Cook rice according to package instructions if not already done.
Assemble the bowl: Line a bowl with lettuce, add a scoop of rice, top with grilled chicken slices and cucumber. Garnish with chopped parsley.
Serve: Enjoy warm or cold with your favorite dressing or sauce!
