🇮🇹 Risotto al Limone (Lemon Risotto)
Creamy risotto with a fresh lemony zing—perfect as a light main or zesty side!
Ingredients:
• 1 cup Arborio rice
• 1 lemon (zested and juiced)
• 1/4 cup Parmesan cheese
• 2 tbsp butter
• 1 small onion, chopped
• 3 cups vegetable broth (warm)
• Salt, pepper, chopped parsley
Instructions:
1. 🧅 Sauté onion in butter, add rice and toast for 1–2 min.
2. 🍋 Add lemon juice & zest, then add broth one ladle at a time.
3. đź§€ Stir in Parmesan, season, garnish with parsley and serve creamy!
