Rice and Shine!!! Four recipes for all rice lovers~~

2. Ham
1½ tablespoons canola oil
1 cup diced smoked uncured ham steak (cut into ½-inch sized small diced cubes)
½ cup diced yellow onion
2 teaspoons minced garlic
1 cup frozen peas and carrots
3 cups cooked and cooled jasmine rice
2 large eggs, lightly whisked
3 tablespoons soy sauce
1 teaspoon sesame oil
¼ cup chopped green onions
3. Pork
1½ tablespoons of vegetable oil (divided into ½ tablespoon and 1 tablespoon)
2 large eggs, beaten
2 medium-sized whole carrots, peeled and diced
½ cup of diced sweet yellow onion
⅔ cup of frozen green peas
8 ounces of ground pork
4 cups of cooked, cold long-grain white rice
2 teaspoons of sesame oil
3 tablespoons of dark soy sauce
1½ tablespoons of hoisin sauce
2 green onions, thinly sliced
4. Chicken
3 cups of cooked jasmine rice (chilled – it will clump too much if still warm when added to the frying pan)
2 tablespoons of vegetable oil
1 pound of boneless skinless chicken breasts, cut into bite-sized cubes
½ cup of fine-diced white onion
2 teaspoons of minced garlic
1 cup of frozen peas & carrots
2 large eggs
1 tablespoon of sesame oil
¼ cup of soy sauce
