๐ Ingredients:
For the chicken & sauce:
600g chicken breast, diced ๐
1 red bell pepper, chopped ๐ซ
2 tbsp olive oil ๐ซ
1 small onion, finely chopped ๐ง
2 garlic cloves, minced ๐ง
200ml heavy cream ๐ฅ
1 tbsp tomato paste ๐
1 tsp paprika powder ๐ถ
1 tsp smoked paprika ๐ถ
ยฝ tsp chili flakes (optional) ๐ฅ
Salt & pepper to taste ๐ง
Fresh parsley, chopped ๐ฟ
For the side:
200g long grain rice ๐
Salt for boiling water ๐ง
๐ฉโ๐ณ Instructions:
Cook rice in salted water according to package directions. Meanwhile, heat olive oil in a large pan, sautรฉ onions and garlic until soft, then add diced chicken and cook until browned. Toss in bell pepper and cook for another 5 minutes. Stir in tomato paste, paprika, smoked paprika, and chili flakes, cooking for a minute. Pour in cream, season with salt and pepper, then simmer on low heat for 10 minutes until thickened. Serve hot with fluffy rice and a sprinkle of parsley on top.
๐ Notes & Variations:
Add mushrooms or spinach for extra veggies.
For a lighter version, use half cream and half milk.
Delicious with mashed potatoes instead of rice!
