For the chicken & sauce:
600g chicken breast, diced ๐Ÿ—

1 red bell pepper, chopped ๐Ÿซ‘

2 tbsp olive oil ๐Ÿซ’

1 small onion, finely chopped ๐Ÿง…

2 garlic cloves, minced ๐Ÿง„

200ml heavy cream ๐Ÿฅ›

1 tbsp tomato paste ๐Ÿ…

1 tsp paprika powder ๐ŸŒถ

1 tsp smoked paprika ๐ŸŒถ

ยฝ tsp chili flakes (optional) ๐Ÿ”ฅ

Salt & pepper to taste ๐Ÿง‚

Fresh parsley, chopped ๐ŸŒฟ

For the side:
200g long grain rice ๐Ÿš

Salt for boiling water ๐Ÿง‚

๐Ÿ‘ฉโ€๐Ÿณ Instructions:
Cook rice in salted water according to package directions. Meanwhile, heat olive oil in a large pan, sautรฉ onions and garlic until soft, then add diced chicken and cook until browned. Toss in bell pepper and cook for another 5 minutes. Stir in tomato paste, paprika, smoked paprika, and chili flakes, cooking for a minute. Pour in cream, season with salt and pepper, then simmer on low heat for 10 minutes until thickened. Serve hot with fluffy rice and a sprinkle of parsley on top.

Add mushrooms or spinach for extra veggies.

For a lighter version, use half cream and half milk.

Delicious with mashed potatoes instead of rice!
