🇮🇹 Budino di Riso (Rice Custard Tart)
A creamy vanilla-scented rice pudding baked inside a flaky pastry crust – simple and comforting!
Ingredients:
• 1 sheet shortcrust pastry
• 120 g arborio rice
• 500 ml milk
• 80 g sugar
• 1 tsp vanilla extract
• 1 egg + 1 yolk
• Zest of 1 lemon
• Pinch of salt
Instructions:
1️⃣ Cook rice in milk with sugar, vanilla, lemon zest, and salt until soft and thickened.
2️⃣ Let cool, then stir in egg and yolk.
3️⃣ Line tart pan with pastry and fill with rice mixture.
4️⃣ Bake at 180°C for 30–35 mins until golden and set.
