Ingredients:
For the Chicken:
🍗 Chicken breast - 2 (boneless, skinless)
🧂 Salt & black pepper - to taste
🫒 Olive oil - 1 tbsp
🌿 Garlic powder - 1/2 tsp
🍋 Lemon juice - 1 tbsp
For the Veggies:
🌽 Corn kernels - 1 cup (cooked)
🥦 Broccoli florets - 1 cup (steamed)
🍄 Mushrooms - 1 cup (sliced)
🍅 Cherry tomatoes - 1 cup (halved)
🧈 Butter - 1 tbsp (for mushrooms)
🧄 Garlic cloves - 2 (minced)
Directions:
Season & Grill the Chicken:
Rub chicken breasts with olive oil, salt, pepper, garlic powder, and lemon juice. Heat a grill pan over medium heat and cook the chicken for 6-8 minutes per side until golden brown and fully cooked. Remove and slice thinly.
Prepare the Mushrooms:
In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Toss in the mushrooms and cook for 5-7 minutes until golden and tender. Season with salt and pepper.
Steam the Broccoli:
In a pot of boiling water, steam broccoli florets for 3-5 minutes until tender-crisp.
Assemble the Bowl:
Divide grilled chicken, corn, steamed broccoli, sautéed mushrooms, and cherry tomatoes between two bowls.
Serve & Enjoy:
Garnish with a squeeze of fresh lemon juice or a sprinkle of fresh herbs, if desired. Serve warm.
