Warm up your soul with this hearty Chicken & Wild Rice Soup, packed with flavor and perfect for any chilly day! 🍲🍗🌿

Ingredients:
- 3 cups pre-cooked chicken, shredded or diced
- 8 cups low-sodium chicken bone broth
- 2 dried bay leaves
- 2 medium carrots, peeled and diced (about 1 1/2 cups)
- 4 cloves garlic, minced
- 1 tsp lemon zest
- 1 tsp dried oregano
- 1/4 cup fresh parsley, chopped
- 2 tsp fresh rosemary, chopped
- 1 tsp fresh sage, chopped
- 6 sprigs fresh thyme
- 1 medium yellow onion, diced (about 2 cups)
- 2 tbsp fresh lemon juice
- 1/2 tsp freshly ground black pepper
- 2 tbsp cassava flour
- 1 1/2 tsp kosher salt
- 2 tbsp ghee

Directions:
1. Start by rinsing and draining the wild rice. This simple step removes excess starch and keeps your soup from turning gummy.

2. Grab a large pot or Dutch oven and melt the ghee over medium heat. Once it's hot and ready, toss in the diced onion and carrots. Let them cook for about 5-7 minutes, stirring occasionally, until they’re nice and tender.

3. Now it’s time to add the minced garlic. Sauté for another minute until it fills your kitchen with its delicious aroma. Sprinkle the cassava flour over the sautéed veggies, stirring to combine. Toss in the kosher salt, dried oregano, and black pepper, cooking for another minute until the flour starts to toast.

4. Carefully pour in the chicken bone broth, making sure to scrape up any tasty bits stuck to the bottom of the pot.

5. Stir in the rinsed wild rice, fresh thyme, bay leaves, rosemary, and sage. Crank up the heat to medium-high and bring everything to a boil.

6. Once it’s bubbling, drop the heat down to low, cover it with a lid, and let it simmer for 25 minutes, or until the rice is tender.

7. After 25 minutes, it’s time for the star—add your pre-cooked chicken into the pot. Stir well and let it cook, covered, for another 10 minutes.

8. When you’re ready, remove the pot from the heat and fish out the thyme sprigs and bay leaves. Stir in the lemon zest, lemon juice, and chopped parsley for a bright finish. Serve it up hot and maybe pair it with some toasted sourdough. Enjoy every comforting spoonful!
