π Ingredients:
For the Glazed Chicken:
π 300g chicken breast, cut into bite-sized cubes
π§ 2 garlic cloves, minced
π§ Salt & black pepper, to taste
π± 1 tbsp chopped parsley (fresh or dried)
π§ 1 tbsp olive oil
For the Glaze:
π§ 2 tbsp soy sauce
π― 1 tbsp honey or brown sugar
π 1 tsp balsamic vinegar or lemon juice
π§ 1 tsp garlic powder (optional)
πΆοΈ Pinch of chili flakes (optional)
For the Rice:
π 1 cup basmati rice
π§ 2 cups water
π§ Β½ tsp salt
πΏ 1 tbsp chopped fresh herbs (parsley or coriander)
For the Potatoes:
π₯ 2 medium potatoes, peeled and cubed
π§ Salt, to taste
π§ 1 tbsp olive oil or butter
πΏ Optional: pinch of paprika or turmeric for color
For the Vegetables:
π 100g mushrooms, sliced

4 cherry tomatoes, halved
π§ 1 tsp olive oil
π§ Salt & pepper
πΏ Dried herbs (oregano or thyme), to taste
π©βπ³ Instructions:
Cook the rice: Rinse rice until water runs clear. Bring 2 cups water and salt to boil, add rice, reduce heat, cover, and cook 12β15 minutes until fluffy. Stir in fresh herbs and keep warm.
Prepare the potatoes: Boil cubed potatoes in salted water for 8β10 minutes until just tender. Drain well.
Pan-fry potatoes: Heat oil or butter in a pan, add potatoes, and sautΓ© on medium-high heat for 6β8 minutes until golden and crispy. Sprinkle with paprika or turmeric if desired.
SautΓ© mushrooms & tomatoes: In another pan, heat olive oil, add mushrooms and sautΓ© for 4β5 minutes until browned. Add cherry tomatoes, herbs, salt, and pepper. Cook 1β2 more minutes. Set aside.
Cook the chicken: Season chicken cubes with salt, pepper, and minced garlic. SautΓ© in olive oil over medium heat for 5β6 minutes until golden and cooked through.
Add the glaze: In the same pan, reduce heat and add soy sauce, honey, balsamic, and chili flakes. Toss to coat and simmer 1β2 minutes until sticky and glossy.
Assemble the plate: Serve the glazed chicken with a scoop of herbed rice, crispy potatoes, and sautΓ©ed veggies.
