Keto Cheesy Bacon Cauliflower Bites
Ingredients
2 cups riced cauliflower (fresh or frozen, cooked and squeezed dry)
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits (crispy)
2 large eggs
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
Sour cream (for topping)
Optional: chopped green onions for garnish
Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone liners.
Prepare cauliflower
If using frozen riced cauliflower, microwave it and squeeze out excess water with a cheesecloth or towel.
If fresh, steam until tender and then rice with a food processor.
Mix ingredients
In a large bowl, combine cauliflower, cheddar cheese, bacon, eggs, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well until a thick batter forms.
Fill muffin tin
Spoon mixture into muffin cups, pressing down gently.
Bake for 20–25 minutes until golden brown and set.
Cool slightly before removing from the tin.
Top with sour cream and sprinkle with green onions (if desired).
