1/4 cup red onion, finely chopped 🧅
1/4 cup cilantro, chopped 🌿
1 tbsp lime juice 🍋

For the Chilli Mayo:
1/4 cup mayonnaise 🥄
1-2 tsp sriracha or chilli sauce 🌶️
1 tsp lime juice 🍋
Pinch of salt 🧂
🧑🍳 How to Make Salmon Bites with Jasmine Coconut Rice & Mango Cucumber Salad with Chilli Mayo:
Step 1: Prepare the Jasmine Coconut Rice:
Rinse the jasmine rice under cold water until the water runs clear.
In a saucepan, combine the coconut milk, water, and a pinch of salt. Bring to a boil.
Add the jasmine rice, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and set aside.
Step 2: Make the Mango Cucumber Salad:
In a bowl, combine the diced mango, cucumber slices, red onion, cilantro, and lime juice.
Season with salt and pepper, toss well, and set aside.
Step 3: Cook the Salmon Bites:
Season the salmon pieces with soy sauce, olive oil, salt, pepper, garlic, and honey.
Heat olive oil in a large skillet over medium-high heat.

Spoon the jasmine coconut rice into bowls as the base.
Top with the crispy salmon bites.
Add a generous serving of mango cucumber salad on the side.
Drizzle the chilli mayo over the salmon or serve it on the side for dipping.
