Seafood Paella with Saffron Rice
Ingredients:
- 2 cups of Arborio rice
- 4 cups of vegetable broth
- 1 teaspoon of saffron threads
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of green peas
- 1 cup of cherry tomatoes, halved
- 1 pound of shrimp, peeled and deveined
- 1/2 pound of mussels, cleaned
- 1/4 cup of olive oil
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions:
1. Prepare the saffron: In a small bowl, combine the saffron threads with 1/4 cup of hot vegetable broth and set aside to steep.
2. Sauté the vegetables: In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion, diced bell pepper, and minced garlic. Cook until they are soft and fragrant.
3. Add the rice: Stir in the Arborio rice and paprika, cooking for about 2 minutes until the rice is well-coated with the oil and vegetables.
4. Pour in the broth: Carefully add the remaining vegetable broth and the saffron mixture to the rice. Season with salt and pepper. Bring it to a gentle simmer.
5. Add the shrimp and mussels: After about 10 minutes, add the shrimp, mussels, cherry tomatoes, and green peas. Cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.
6. Rest the paella: Once cooked, remove the pan from heat. Cover it with a clean kitchen towel or lid and let it rest for about 5 minutes.
7. Serve: Fluff the paella with a fork and garnish with fresh parsley. Serve with lemon wedges on the side for a zesty kick.
