Avocado Sushi Cake
This Avocado Sushi Cake is a beautiful and delicious twist on traditional sushi. It layers sushi rice, creamy avocado, and fresh salmon for a show-stopping dish that’s perfect for parties or a special meal.
Ingredients:
1½ cups sushi rice
4 tsp sugar
3 tbsp rice vinegar
2 nori sheets
2 ripe avocados, thinly sliced
500g fresh salmon, thinly sliced
1 tsp black sesame seeds
1 tsp white sesame seeds
Extra avocado for garnish
½ cup soy sauce
¼ cup finely grated fresh ginger
Instructions:
Prepare the Sushi Rice:
Cook the sushi rice according to the package instructions.
In a small saucepan over medium heat, combine the sugar and rice vinegar. Stir until the sugar dissolves.
Gently fold the vinegar mixture into the cooked rice using a slicing motion to avoid mashing the rice.
Prepare the Cake Mold:
Line the base of a 9-inch (22 cm) round baking tin with baking paper.
Layer the Sushi Cake:
Spread half of the prepared rice evenly in the base of the tin.
Layer half of the thinly sliced avocado on top of the rice.
Arrange half of the fresh salmon slices over the avocado.
Repeat with the remaining rice, avocado, and salmon, finishing with a layer of salmon on top.
Assemble and Serve:
Carefully turn the sushi cake out onto a serving platter.
Sprinkle the top with both black and white sesame seeds.
Garnish with extra avocado slices for a finishing touch.
Serve with Soy Sauce and Ginger:
Serve the sushi cake with soy sauce and freshly grated ginger on the side.
