Creamy Chicken Curry with Rice ππ
A rich and flavorful chicken curry with tender chicken pieces, aromatic spices, and a creamy sauceβserved with fluffy basmati rice!

Ingredients:
For the Chicken Curry:
500g chicken breast, cubed π
1 tbsp olive oil π«
1 onion, chopped π§
2 cloves garlic, minced π§
1 tsp ginger, grated
1 red bell pepper, sliced π«
1 tbsp curry powder πΆ
1 tsp turmeric
1 tsp garam masala
Β½ tsp cumin
Β½ tsp chili flakes (optional)
1 can (400ml) coconut milk π₯₯
200ml chicken broth
Salt & black pepper to taste
Fresh cilantro for garnish πΏ
For the Rice:
1 cup basmati rice π
2 cups water
Β½ tsp salt
Instructions:
Prepare the Rice: Rinse the rice under cold water. Bring 2 cups of water to a boil, add rice and salt, cover, and simmer for 15 minutes. Fluff with a fork.
Cook the Chicken: Heat oil in a pan over medium heat. Sear chicken cubes until golden brown, then set aside.
Make the Curry: In the same pan, sautΓ© onions, garlic, and ginger for 2 minutes. Add bell peppers and cook for another 2 minutes.
Add Spices: Stir in curry powder, turmeric, garam masala, cumin, and chili flakes. Cook for 1 minute until fragrant.
Simmer: Pour in coconut milk and chicken broth. Add chicken back to the pan and simmer for 15 minutes until thick and creamy.
Serve & Enjoy: Plate the rice, pour the curry over, and garnish with fresh cilantro.
