For the Bowl:
2 grilled chicken breasts, sliced ๐
1 cup cherry tomatoes, halved ๐
1 cup corn (cooked or canned, drained) ๐ฝ
1 avocado, sliced ๐ฅ
1/2 cucumber, sliced ๐ฅ
4 cups lettuce or mixed greens ๐ฅฌ
Salt & black pepper to taste
Chili flakes or seasoning of choice ๐ถ๏ธ (optional)
For the Avocado Dressing:
1 ripe avocado ๐ฅ
2 tbsp Greek yogurt or sour cream
1 garlic clove
Juice of 1/2 lime ๐
Salt & pepper
Optional: splash of water or olive oil to thin
๐จโ๐ณ Instructions:
Season the chicken with salt, pepper, and your favorite herbs or spices. Grill or pan-fry until fully cooked and nicely charred, about 5โ6 minutes per side. Slice and set aside.
In a blender or food processor, combine all dressing ingredients and blend until smooth and creamy. Adjust texture with a little water or oil if needed.
In two bowls, arrange a bed of lettuce. Top with sliced chicken, corn, tomatoes, cucumber, and avocado.
Add a generous spoonful of the avocado dressing in the center. Sprinkle with chili flakes or fresh herbs if desired.
Serve immediately and enjoy fresh!
