Salt & black pepper to taste

For the Avocado Dressing:
1 ripe avocado ๐Ÿฅ‘

2 tbsp Greek yogurt or sour cream

1 garlic clove

Juice of 1/2 lime ๐Ÿ‹

Salt & pepper

Optional: splash of water or olive oil to thin

Season the chicken with salt, pepper, and your favorite herbs or spices. Grill or pan-fry until fully cooked and nicely charred, about 5โ€“6 minutes per side. Slice and set aside.

In a blender or food processor, combine all dressing ingredients and blend until smooth and creamy. Adjust texture with a little water or oil if needed.

In two bowls, arrange a bed of lettuce. Top with sliced chicken, corn, tomatoes, cucumber, and avocado.
