Reese's cheesecake cookies
Ingredients
for the cookie dough:
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup brown sugar, packed
- 8 oz cream cheese, softened
- 2 teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
mix-ins:
- 1 ½ cups chopped reese’s peanut butter cups
- ½ cup peanut butter chips
- ½ cup chocolate chips
Instructions
1. preheat oven to 350°f (175°c) and line a baking sheet with parchment paper.
2. cream the butter & sugars: in a large bowl, beat butter, granulated sugar, and brown sugar until fluffy.
3. add cream cheese & vanilla: mix in the cream cheese and vanilla until smooth.
4. combine dry ingredients: in a separate bowl, whisk flour, baking soda, and salt. gradually add to the wet ingredients, mixing until just combined.
5. fold in mix-ins: gently stir in chopped reese’s, peanut butter chips, and chocolate chips.
6. shape & bake: scoop dough onto the baking sheet and bake for 10-12 minutes, or until the edges are golden brown.
7. cool & enjoy: let cool on the baking sheet for a few minutes before transferring to a wire rack.
