Thick and Chewy Peanut Butter Cookies
Ingredients:
• 1/2 cup unsalted butter, softened
• 1 cup creamy peanut butter
• 1 cup granulated sugar
• 1/2 cup brown sugar, packed
• 1 large egg
• 1 tsp vanilla extract
• 1 1/4 cups all-purpose flour
• 1/2 tsp baking soda
• 1/4 tsp salt
Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream the Butters & Sugars:
In a large bowl, use a hand mixer or stand mixer to beat together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
3. Add Wet Ingredients:
Beat in the egg and vanilla extract until fully combined.
4. Add Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until a thick cookie dough forms.
5. Shape & Press:
Scoop the dough into tablespoon-sized balls and place them on the prepared baking sheet about 2 inches apart. Use a fork to gently press a crisscross pattern onto the top of each cookie.
6. Bake:
Bake for 10–12 minutes, or until the edges are set and the centers look slightly underbaked. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack.
7. Serve:
Enjoy warm for the ultimate chewy texture or store in an airtight container for up to 5 days.
