For the Chicken π
2 chicken breasts, sliced
2 tbsp olive oil
Juice of 1 lemon π
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp paprika
Salt & pepper to taste
For the Roasted Potatoes π₯
500 g baby potatoes, halved
2 tbsp olive oil
1 tsp rosemary or oregano
Salt & pepper
For the Tzatziki π₯
1 cup Greek yogurt
1/2 cucumber, grated & squeezed
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp olive oil
Salt & fresh dill
Toppings & Base π₯
1 cup cooked rice or quinoa
Cherry tomatoes, halved π
Sliced cucumber π₯
Red onion, thinly sliced
Fresh parsley or mint
π¨βπ³ Instructions:
Marinate the chicken with olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for at least 15 minutes. While it marinates, roast the potatoes at 220Β°C (425Β°F) for 25β30 minutes until golden and crisp. Cook the chicken in a skillet over medium heat for about 5β6 minutes per side or until fully cooked. For the tzatziki, combine all ingredients and mix well. Assemble the bowl: add a base of rice or quinoa, top with grilled chicken, roasted potatoes, and fresh veggies. Add a generous dollop of tzatziki and garnish with herbs. Enjoy warm or cold!
