For the Prawns:
500g large prawns, peeled and deveined (tails on or off)
1 tbsp oil (vegetable or sesame)
4 garlic cloves, finely chopped
1–2 red chilies, thinly sliced (adjust to taste)
1 tbsp soy sauce
1 tbsp fish sauce (or more soy sauce)
1 tbsp lime juice
1 tsp brown sugar
Optional: pinch of chili flakes for extra heat
For the Jasmine Rice:
1 cup jasmine rice
1¾ cups water
Pinch of salt
Garnishes:
Chopped green onions
Fresh cilantro
Lime wedges
Toasted sesame seeds (optional)
🍳 Instructions
1. Cook the Rice:
Rinse jasmine rice under cold water until clear.
In a saucepan, bring rice, water, and salt to a boil.
Cover, reduce heat to low, and simmer for 12–15 minutes.
Let it steam off heat for 5 minutes, then fluff with a fork.
2. Cook the Prawns:
Heat oil in a large skillet over medium-high heat.
Add garlic and chilies, sauté for 30–60 seconds until fragrant.
Add prawns and cook for 2–3 minutes per side, until pink and cooked through.
Stir in soy sauce, fish sauce, lime juice, and sugar. Toss to coat.
Let the sauce reduce slightly until it clings to the prawns.
3. Serve:
Spoon jasmine rice onto plates or bowls.
Top with garlic chili prawns and drizzle over any remaining sauce from the pan.
