Prawn Curry with Coconut Milk 🥘✨
Ingredients:
- 1 lb prawns or shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp turmeric powder
- 1/2 tsp curry powder
- 1/2 tsp chili powder (optional)
- 1 cup coconut milk
- 1/2 cup vegetable or chicken broth
- 1 cup fresh spinach leaves
- 1 tbsp fresh lemon juice
- Salt and black pepper to taste
- 2 tbsp fresh cilantro, chopped (for garnish)
Directions:
1. Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened, about 3 minutes.
2. Stir in garlic, ginger, turmeric, curry powder, and chili powder (if using). Cook for 1 minute until fragrant.
3. Pour in the coconut milk and broth, stirring to combine. Simmer for 3-4 minutes.
4. Add the prawns to the skillet and cook for 3-5 minutes, or until they turn pink and are fully cooked.
5. Stir in the spinach and lemon juice, cooking for another 1-2 minutes until the spinach wilts.
6. Season with salt and black pepper to taste.
7. Serve hot, garnished with fresh cilantro, alongside steamed rice or naan bread.
