🧾 Ingredients (Serves 2–3)

🍗 Pomegranate-Glazed Chicken
• 4 boneless, skinless chicken thighs
• 1 tbsp olive oil
• ½ cup pomegranate juice
• 1 tbsp honey
• 1 tsp soy sauce
• ½ tsp grated ginger
• 1 clove garlic, minced
Salt & pepper to taste



🌾 Cauliflower Rice & Veggies
• 2 cups cauliflower rice
• 1 cup kale, chopped
• ¼ cup toasted almonds, chopped
• 1 tbsp olive oil
• Salt & pepper to taste



🥣 Creamy Pomegranate-Cashew Yogurt Drizzle
• ½ cup plain Greek yogurt
• 2 tbsp pomegranate juice
• 1 tbsp cashew butter (or almond butter)
• 1 tsp lemon juice
• Salt & pepper to taste
Water (to thin, if needed)



🍍 Garnish
• Fresh pomegranate seeds
• Optional: chopped fresh parsley



🔥 Instructions

1. Prepare & Cook the Chicken
• Heat olive oil in a skillet over medium heat.
• Season chicken thighs with salt and pepper.
• Cook chicken for 4–5 minutes per side until golden and cooked through.
• In a small bowl, whisk together pomegranate juice, honey, soy sauce, ginger, and garlic.
• Brush the glaze onto the chicken and cook for an additional 2–3 minutes, turning occasionally, until the glaze is sticky and slightly caramelized.



2. Make the Cauliflower Rice
• Heat olive oil in another skillet over medium heat.
• Add cauliflower rice and sauté for 3–4 minutes until tender.
• Stir in chopped kale and cook for another 1–2 minutes until wilted.
• Season with salt and pepper.
• Mix in the toasted almonds.



3. Prepare the Sauce
• In a small bowl, whisk together yogurt, pomegranate juice, cashew butter, lemon juice, salt, and pepper.
• Add water a teaspoon at a time until the sauce reaches a smooth, drizzleable consistency.
