Cheesy Stuffed Meatloaf 🍖🧀

Ingredients:

For the Meatloaf:
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1 large egg
1 small onion, finely chopped
1/4 cup milk
2 cloves garlic, minced
1/2 cup bell pepper, finely chopped (optional)
1 tsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning (optional)
For the Cheese Stuffing:
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1 tbsp fresh parsley (optional)
For the Topping:
1/2 cup ketchup
1 tbsp brown sugar
1 tbsp Dijon mustard

Instructions:
Step 1: Prepare the Meatloaf

Preheat the oven to 375°F (190°C).

In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix everything until well combined.

Lay a piece of parchment paper or plastic wrap on a flat surface, then shape the meat mixture into a rectangle (about 12x6 inches) on the surface.

Step 2: Stuff with Cheese

In a separate bowl, mix together the mozzarella, cheddar, and cream cheese.

Spread the cheese mixture evenly along the center of the meat rectangle.

Carefully roll up the meatloaf, folding the edges over to seal the cheese inside. Pinch the ends to close it up.

Step 3: Bake the Meatloaf

Transfer the rolled meatloaf to a baking dish or rimmed baking sheet.

Bake in the preheated oven for 45 minutes to 1 hour, or until the meat is cooked through and reaches an internal temperature of 160°F (71°C).

Step 4: Add the Topping

While the meatloaf is baking, prepare the topping by mixing ketchup, brown sugar, and Dijon mustard in a small bowl.

About 15 minutes before the meatloaf is done, spread the topping mixture over the meatloaf.

Continue baking until the topping has caramelized and the meatloaf is golden brown and cooked through.

Step 5: Serve

Once baked, remove from the oven and let it rest for about 10 minutes.

Slice and serve with mashed potatoes, rice, or your favorite side dish.
