CREAMY CAJUN STEAK AND RICE WITH PARMESAN
Ingredients:
1 lb thinly sliced steak (sirloin or flank)
1 1/2 cups jasmine rice
1 tablespoon olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 small yellow onion, diced
4 cloves garlic, minced
1 red bell pepper, diced
3 cups beef broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley or green onions, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium-high heat. Season the steak slices with Cajun seasoning, smoked paprika, and garlic powder, then sear until browned and cooked through. Remove from the pan and set aside.
In the same pan, add the onion and red bell pepper. Sauté until soft, about 4-5 minutes. Stir in the garlic and cook for 1 more minute.
Add the rice and stir to coat. Toast for 1-2 minutes.
Pour in the beef broth, stir, and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and liquid absorbed.
Stir in the heavy cream and Parmesan cheese until the mixture is creamy and smooth.
Return the steak to the skillet and stir to combine. Let it warm through for 2-3 minutes.
Season with salt and pepper to taste.
Garnish with chopped parsley or green onions and serve hot.
