Island Spiced Lamb Curry with Sweet Peppers
Ingredients
2 lbs lamb (cut into chunks)
2 tablespoons curry powder
1 tablespoon allspice
4 cloves garlic (minced)
1 onion (chopped)
1 bell pepper (sliced, any color)
2-3 sweet peppers (sliced)
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
2 tablespoons vegetable oil
1 can (14 oz) coconut milk
2 cups beef or lamb broth
Salt and pepper (to taste)
Fresh cilantro (for garnish)
Instructions
1. Brown the Lamb
Heat Oil: In a large pot, heat vegetable oil over medium-high heat.
Sear Lamb: Add lamb chunks and brown on all sides, about 5-7 minutes. Remove and set aside.
2. Sauté Aromatics
Cook Onions and Garlic: In the same pot, add chopped onion and minced garlic. Sauté until softened, about 5 minutes.
3. Add Spices
Stir in Curry Powder and Allspice: Add curry powder, allspice, and fresh thyme. Cook for 1-2 minutes to release the flavors.
4. Combine Ingredients
Return Lamb: Add the browned lamb back to the pot, along with sliced bell pepper and sweet peppers.
Add Liquids: Pour in coconut milk and broth. Stir to combine.
5. Simmer
Cook: Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and flavors are well blended. Stir occasionally.
6. Serve
Season: Adjust salt and pepper to taste.
Plate the Dish: Serve the island spiced lamb curry hot, garnished with fresh cilantro.
Tips
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently.
Variations: Serve with rice or flatbread for a complete meal.
