Ingredients
🐓 Chicken thighs: 600g, bone-in or boneless, skin removed
🧅 Onions: 2 large, finely chopped

🥛 Coconut milk: 200ml
🧄 Garlic: 3 cloves, minced
🧂 Ginger: 1 tbsp, freshly grated
🌶️ Curry powder: 2 tbsp (mild or medium, as preferred)
🌶️ Turmeric: 1 tsp
🌶️ Chilli powder: 1/2 tsp (optional, for extra heat)
🛢️ Vegetable oil: 2 tbsp
🌿 Coriander leaves: Fresh, chopped, for garnish
🧂 Salt: To taste

🍋 Lemon juice: 1 tbsp
Method
🧅 Sauté the onions: Heat the oil in a large pan over medium heat. Add the onions and cook for 8–10 minutes, stirring occasionally, until golden and softened.
🧄 Add garlic and ginger: Stir in the garlic and ginger, cooking for 1–2 minutes until fragrant.
🌶️ Add spices: Sprinkle in the curry powder, turmeric, and chilli powder (if using). Stir well to coat the onions in the spices.
🍅 Add tomatoes: Pour in the chopped tomatoes and cook for 5 minutes, allowing the mixture to thicken slightly.
🐓 Add chicken: Place the chicken pieces into the pan, ensuring they are coated in the tomato mixture. Cook for 5–7 minutes, turning occasionally.
🥛 Stir in coconut milk: Pour in the coconut milk, reduce the heat to low, and simmer for 25–30 minutes, stirring occasionally, until the chicken is cooked through and tender.
🍋 Add lemon and season: Squeeze in the lemon juice and season with salt and black pepper to taste.
🌿 Garnish: Sprinkle with fresh coriander leaves before serving.
