🛒 Ingredients
2 boneless chicken breasts 🍗
1 tbsp olive oil 🫒
1/2 tsp oregano 🌿
Salt & pepper 🧂
1/2 cup basmati rice 🍚
1 cup water + pinch of salt
Toppings:
6–8 cherry tomatoes, halved 🍅
1/2 cucumber, sliced 🥒
1/4 red onion, thinly sliced
6–8 Kalamata olives 🫒
1/4 cup canned chickpeas, drained 🧆
2 artichoke hearts, quartered 🌿
Fresh dill for garnish 🌿
Tzatziki sauce:
150 g Greek yogurt 🥣
1/2 cucumber, grated & drained 🥒
1 garlic clove, minced 🧄
1 tbsp olive oil 🫒
1 tbsp lemon juice 🍋
Fresh dill or parsley 🌿
Salt & pepper to taste 🧂
👨🍳 Instructions
Cook rice: Rinse rice, place in pot with salted water, bring to a boil, then simmer covered 12–15 minutes until fluffy.
Prepare chicken: Rub chicken with olive oil, oregano, salt, and pepper. Grill or pan-fry 5–6 minutes per side until golden and cooked through. Rest, then slice.
Make tzatziki: Mix yogurt, grated cucumber, garlic, olive oil, lemon juice, herbs, salt, and pepper in a bowl. Chill until serving.
Assemble bowl: Place rice at the base, then arrange grilled chicken, tomatoes, cucumber, onion, olives, chickpeas, and artichokes around it.
Top with tzatziki: Add a generous spoonful of tzatziki and garnish with fresh dill.
Serve: Enjoy immediately as a refreshing Mediterranean meal.
