Coconut Fish Curry with Carrots 🐟🥥🥕
Ingredients:
For the Fish and Marinade:
4 fillets of white fish (like cod, tilapia, or snapper) 🐟
1 tbsp lemon juice 🍋
1 tsp turmeric powder 🌿
Salt & pepper to taste 🧂
1 tbsp olive oil (for cooking) 🍳
For the Curry Sauce:
1 tbsp olive oil (or coconut oil) 🥥
1 medium onion, finely chopped 🧅
3 cloves garlic, minced 🧄
1-inch piece of ginger, grated 🧑🍳
1-2 green chilies, sliced (optional, adjust for spice level) 🌶️
1 tbsp curry powder or garam masala 🌶️
1 tsp ground cumin 🌱
1 tsp ground coriander 🌱
1 can (400ml) coconut milk 🥥
1 cup vegetable broth or water 🌊
2 medium carrots, peeled and sliced into rounds 🥕
1 medium tomato, chopped 🍅
Salt & pepper to taste 🧂
For Garnish:
Fresh cilantro, chopped 🌿
Lime wedges 🍋
Instructions:
Marinate the Fish:
Place the fish fillets in a bowl. Add lemon juice, turmeric powder, salt, and pepper. Gently mix and let it marinate for 15-20 minutes. 🕒
Prepare the Curry Sauce:
In a large skillet or deep pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. 🧅🔥
Add the minced garlic and grated ginger, cooking for another minute until fragrant. 🧄🌱
