Chicken in Sweet and Sour Sauce 🍗
Ingredients:
1 lb boneless, skinless chicken breast, cut into bite-size pieces
2 tbsp vegetable oil
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small onion, chopped
1/2 cup pineapple chunks (canned, drained)
Salt and black pepper to taste
For the Sauce:
1/2 cup ketchup
1/4 cup rice vinegar or apple cider vinegar
1/3 cup brown sugar
2 tbsp soy sauce
1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Directions:
Heat oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 5–7 minutes until browned and cooked through. Remove and set aside.
In the same pan, add bell peppers and onion. Stir-fry for 3–4 minutes until tender-crisp.
Add pineapple chunks and cooked chicken back into the pan. Stir to combine.
In a bowl, whisk together ketchup, vinegar, brown sugar, and soy sauce.
Pour the sauce into the skillet and bring to a gentle simmer.
Stir in the cornstarch and water mixture. Cook for 2–3 more minutes until the sauce thickens.
Serve hot over steamed rice or noodles.
