Ingredients:
For the Bowl:
1 cup cooked basmati rice 🍚
200g halloumi cheese, cubed 🧀
1 tbsp olive oil 🫒
½ cup cherry tomatoes, halved 🍅
½ cup cucumber, sliced 🥒
¼ small red onion, thinly sliced 🧅
¼ cup kalamata olives 🫒
For the Tzatziki Sauce:
½ cup Greek yogurt 🥄
½ cucumber, grated and drained 🥒
1 garlic clove, minced 🧄
1 tbsp lemon juice 🍋
1 tbsp fresh dill or parsley, chopped 🌿
Salt & black pepper to taste
Instructions:
Grill the Halloumi: Heat olive oil in a pan over medium heat. Add halloumi cubes and grill for 2-3 minutes per side until golden brown.
Prepare the Salad: In a bowl, mix cherry tomatoes, cucumber, and red onion. Drizzle with olive oil and season with salt and pepper.
Make the Tzatziki: Combine Greek yogurt, grated cucumber, garlic, lemon juice, and herbs in a bowl. Season with salt and pepper.
Assemble the Bowl: Place the cooked rice in a bowl, add grilled halloumi, salad, and kalamata olives. Top with tzatziki sauce.
