Easy Miso Shrimp Scampi π§πΏπ€
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/4 cup chicken broth
- 1 tbsp white miso paste
- 2 tbsp unsalted butter
- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Cooked pasta, rice, or crusty bread for serving
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and black pepper. Cook for 2 minutes on each side until just pink. Remove and set aside.
2. In the same skillet, lower the heat to medium. Add minced garlic and sautΓ© until fragrant, about 1 minute.
3. Stir in chicken broth and miso paste, whisking until the miso dissolves. Simmer for 2-3 minutes to reduce slightly.
4. Add butter, lemon juice, and red pepper flakes (if using). Stir until the butter melts and the sauce becomes creamy.
5. Return the shrimp to the skillet and toss to coat. Cook for 1-2 minutes until heated through.
6. Serve immediately, garnished with fresh parsley, over pasta, rice, or with crusty bread.
