"Better Than Takeout — Spanish Rice the Way We Make It at Home"
Ingredients:
1 cup long-grain rice
2 tablespoons olive oil
1/2 bell pepper, diced
1/4 cup tomato sauce
1/2 small onion
1 garlic clove
2 cups chicken broth
1/4 teaspoon chili powder
Salt and pepper to taste
Directions:
Why go out when homemade tastes better? In a skillet, heat olive oil and toast the rice until golden. Add diced bell pepper, onion, and garlic. Cook until soft and fragrant.
Stir in tomato sauce, chili powder, and seasoning. Add broth and bring to a boil. Cover and simmer over low heat for 20 minutes, or until rice is tender.
