Grilled Shrimp Bowl with Creamy Garlic Sauce
Ingredients
For the shrimp:
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
½ tsp chili flakes (optional for heat)
Juice of ½ lemon
For the creamy garlic sauce:
½ cup Greek yogurt (or mayonnaise for a richer sauce)
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
½ tsp honey (optional, for balance)
For the bowl:
2 cups cooked rice (white, brown, or cauliflower rice)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup red onion, thinly sliced
1 avocado, sliced
¼ cup fresh cilantro or parsley, chopped
1 lime, cut into wedges
Directions
Marinate the shrimp: In a bowl, combine the shrimp with olive oil, paprika, garlic powder, onion powder, salt, black pepper, chili flakes, and lemon juice. Let it marinate for at least 15 minutes.
Prepare the creamy garlic sauce: In a small bowl, whisk together Greek yogurt (or mayo), olive oil, minced garlic, lemon juice, salt, black pepper, and honey. Set aside in the fridge to let the flavors meld.
Grill the shrimp: Heat a grill pan or outdoor grill over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and slightly charred. Remove from heat and set aside.
Assemble the bowls: Divide the cooked rice among serving bowls. Arrange cherry tomatoes, cucumber, red onion, and avocado slices on top.
Add the shrimp & sauce: Place the grilled shrimp over the bowl and drizzle with the creamy garlic sauce.
Garnish & serve: Sprinkle with fresh cilantro or parsley and serve with lime wedges. Enjoy!
