Curry Beef with Coconut Rice Pasta
Spiced Curry Beef over Creamy Coconut Rice Noodles
Ingredients:
300g beef sirloin or flank steak, thinly sliced
1 tablespoon curry powder
1 teaspoon turmeric
1 teaspoon ground coriander
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 small onion, finely chopped
200ml coconut milk
1 tablespoon tomato paste
1 teaspoon soy sauce (halal-certified or tamari)
Salt and pepper to taste
200g rice noodles
Fresh cilantro, chopped (for garnish)
Lime wedges (optional)
Directions:
In a bowl, toss the beef slices with curry powder, turmeric, coriander, and a pinch of salt. Let marinate for 10 minutes.
Cook rice noodles according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Sauté onion, garlic, and ginger for 2-3 minutes until fragrant.
Add the beef to the skillet and cook for 5-7 minutes until browned and cooked through.
Stir in tomato paste, soy sauce, and coconut milk. Simmer for 5 minutes until the sauce thickens slightly.
Toss in the cooked rice noodles, stir gently to coat in sauce.
Serve warm, garnished with fresh cilantro and a squeeze of lime if desired.
