String Bean Chicken Stir-Fry
Ingredients:
1 pound boneless, skinless chicken breast, sliced thinly
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 pound fresh green beans, trimmed
1 red bell pepper, sliced
1/2 cup onion, sliced
1/4 cup chicken broth
1 tablespoon oyster sauce
1 tablespoon sesame oil
Salt and pepper to taste
Cooked rice for serving

1. In a bowl, combine the sliced chicken, soy sauce, and cornstarch. Mix well and let it marinate for about 15 minutes.
2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
4. Add the green beans, red bell pepper, and onion to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
5. Return the cooked chicken to the skillet. Pour in the chicken broth, oyster sauce, and sesame oil. Stir well to combine and cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.
6. Serve the stir-fry over cooked rice.
