Spicy Chicken and Bell Peppers Stir-Fry
Ingredients:
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust to taste)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
Cooked rice or noodles, for serving
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Season the chicken pieces with salt, black pepper, garlic powder, onion powder, and cayenne pepper.
3. Add the seasoned chicken to the skillet and cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.
4. Add the sliced bell peppers and onion to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
5. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil. Pour this mixture over the chicken and vegetables in the skillet.
6. Stir well to combine and cook for another 1-2 minutes until everything is heated through and coated in the sauce.
7. Serve hot over cooked rice or noodles.
