500 g (1 lb) ground chicken 🍗

1 egg 🥚
1/3 cup breadcrumbs 🍞
Salt & pepper to taste 🧂
1–2 tbsp olive oil for frying 🫒
For the Bowl:
2 cups cooked basmati or jasmine rice 🍚
1/2 cup mixed olives (green & kalamata) 🫒
Fresh lemon wedges 🍋
Extra parsley for garnish 🌿
For the Tzatziki Sauce:
1 cup Greek yogurt 🥛
1 small cucumber, grated and squeezed 🥒
1 garlic clove, minced 🧄
1 tbsp olive oil 🫒
1 tsp lemon juice 🍋
1 tbsp chopped fresh dill or parsley 🌿
Salt to taste 🧂
🔥 Instructions:
In a bowl, combine ground chicken with onion, garlic, parsley, oregano, egg, breadcrumbs, salt, and pepper. Mix until well combined, then shape into small meatballs. Heat olive oil in a skillet and fry the meatballs on medium heat for about 10–12 minutes until golden and cooked through. For the tzatziki, mix all ingredients in a bowl and chill until serving. Assemble bowls with a scoop of rice, meatballs, olives, a generous spoonful of tzatziki, lemon wedges, and garnish with fresh parsley.
