Energy Bites
Servings: Approximately 12-15 bites
Calories: About 150 calories per bite
Ingredients:
- 1 cup old fashioned oats
- 2/3 cup shredded coconut
- 3/4 cup creamy peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup mini semi-sweet chocolate chips
- 1/3 cup honey
- 1 tsp vanilla extract
- 1/3 cup sliced almonds
Directions:
1. In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Mix well until blended.
2. Add in the old fashioned oats, shredded coconut, ground flaxseed, mini semi-sweet chocolate chips, and sliced almonds. Stir thoroughly to combine all ingredients.
3. Cover the bowl and refrigerate the mixture for 1 to 2 hours to allow it to firm up.
4. Once chilled, take the mixture out of the refrigerator and roll it into 1-inch balls.
