Hawaiian BBQ Chicken and Pineapple Foil Packets 🍍

Ingredients:
• 4 boneless, skinless chicken breasts
• 1 cup BBQ sauce (choose your favorite brand or homemade)
• 1 can pineapple chunks, drained (or 1½ cups fresh pineapple)
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 medium red onion, sliced
Salt & black pepper, to taste
• Optional garnish: chopped cilantro or green onions



Instructions:
1. Preheat oven to 400°F (200°C) or grill to medium-high.
2. Prepare foil sheets:
• Cut 4 large sheets of heavy-duty foil (or double up standard foil).
3. Assemble packets:
• Place 1 chicken breast on each sheet of foil.
• Season lightly with salt and pepper.
• Brush with BBQ sauce.
• Add a generous amount of pineapple chunks, bell peppers, and onion slices around the chicken.
• Drizzle a little more BBQ sauce over the top.
4. Seal packets:
• Fold foil over chicken and vegetables. Crimp edges tightly to seal.
5. Cook:
Grill for 20–25 minutes, flipping halfway through.
• Or bake in the oven for 25–30 minutes, until chicken is cooked through (internal temp: 165°F / 74°C).
6. Serve:
• Carefully open foil packets (watch the steam!).
Garnish with chopped cilantro or green onions, and serve hot!



Tips:
• Add cooked rice or cauliflower rice to the bottom of each packet for a full meal.
• Want extra heat? Mix a bit of sriracha or chili flakes into the BBQ sauce.
• Use shrimp or salmon instead of chicken for a tropical seafood twist.
