Beef Stew 😋👇🏻
Ingredients:
- 2 pounds of meat, cut into bite-sized pieces
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 4 sliced carrots
- 3 potatoes, cubed
- 4 cups of beef broth
- 1 teaspoon of dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup of frozen peas
- Fresh chopped parsley (for garnish)
Preparation:
1. Brown the beef: in a large pot, heat the olive oil over medium heat. Add the pieces of meat and cook until brown all over. This should take about 5-7 minutes.
2. Vegetables sauté: add chopped onions and minced garlic to the pot. Sauteed for about 3-4 minutes until the onion is soft and translucent.
3. Add the carrots and potatoes: stir in sliced carrots and chopped potatoes. Mix it all together for a few minutes.
4. Pour in the Broth: Add the beef stock to the pot, ensuring all the ingredients are well covered. Sprinkle in dry thyme, add bay leaf and season with salt and pepper.
5. Slow Cooker - Bring the Stew to a Boil. Once boiling, reduce heat to low and cover pot. Let it slow cook for about 1.5 to 2 hours, until meat is tender.
6. Add the peas: About 5 minutes before serving, stir frozen peas. Let it get warm.
7. Serve and adorn: remove the bay leaf. Spoon the stew in bowls and garnish with fresh parsley.
