Pork Sinigang Recipe
A simple recipe for Pork Sinigang, a popular Filipino sour soup:
Ingredients
- 2 lbs pork (belly, ribs, or shoulder), cut into chunks
- 8 cups water
- 1 large onion, quartered
- 2 tomatoes, quartered
- 1 radish (daikon), sliced
- 1-2 green chili peppers (siling pangsigang)
- 1 cup long green beans (sitaw)
- 1-2 cups leafy greens (like water spinach or kangkong)
- 1 packet (about 1 oz) sinigang mix (or tamarind paste to taste)
- Fish sauce (to taste)
- Salt and pepper (to taste)

1.) Boil the Pork:
- In a large pot, combine water and pork. Bring to a boil, then skim off any scum that rises to the surface.
2.) Add Aromatics:
- Add the onion and tomatoes to the pot. Let it simmer for about 30-40 minutes, or until the pork is tender.
3.) Add Vegetables:
- Add the radish and green beans. Continue to simmer for about 5-10 minutes.
4.) Season the Soup:
- Stir in the sinigang mix (or tamarind paste) and fish sauce. Adjust the seasoning with salt and pepper.
5.) Finish with Greens:
- Add the chili peppers and leafy greens. Cook for another 2-3 minutes until the greens are wilted.
6.) Serve:
- Ladle the soup into bowls and enjoy with steamed rice.
