Ingredients:
For the Beef:
1 pound boneless, skinless beef (such as sirloin or flank steak), cut into thin strips
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Pho Bowls:
8 ounces rice noodles
1 cup bean sprouts
1/2 cup chopped red onion
1/4 cup chopped cilantro
1/4 cup chopped green onions
For the Spicy Peanut Dipping Sauce:
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sriracha
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
1 tablespoon water
Instructions:
Cook the Rice Noodles: Cook the rice noodles according to package directions. Drain and rinse with cold water.
Grill the Beef: Preheat grill to medium-high heat. Season the beef with garlic powder, onion powder, salt, and pepper. Grill the beef for 2-3 minutes per side, or until cooked through.
Make the Spicy Peanut Dipping Sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, garlic, red pepper flakes (if using), and water until smooth.
Assemble the Bowls: Divide the cooked rice noodles among bowls. Top with grilled beef, bean sprouts, red onion, and cilantro. Drizzle generously with the Spicy Peanut Dipping Sauce.
Tips:
You can use any type of protein you like for this recipe, such as grilled chicken or shrimp.
