Ingredients:
• For the Thai Peanut Chicken:
• 1 lb chicken breast or thighs, cut into bite-sized pieces
• 2 tbsp olive oil
• 1/4 cup soy sauce
• 2 tbsp peanut butter
• 1 tbsp honey
• 1 tbsp lime juice
• 1 tsp sriracha (adjust for spice level)
• 1 tsp garlic, minced
• 1/2 tsp ginger, grated
• Salt & pepper, to taste
• For the Coconut Rice:
• 1 cup jasmine rice
• 1 can (13.5 oz) coconut milk
• 1 cup water
• Salt, to taste
• For the Mango-Avocado Salsa:
• 1 ripe mango, diced
• 1 ripe avocado, diced
• 1/4 red onion, finely diced
• 1/4 cup fresh cilantro, chopped
• 1 tbsp lime juice
• Salt & pepper, to taste
• For the Chili Peanut Sauce:
• 2 tbsp peanut butter
• 1 tbsp soy sauce
• 1 tbsp rice vinegar
• 1 tsp sriracha sauce (adjust for spice)
• 1 tsp honey
• 1-2 tbsp warm water (to thin sauce)
Instructions:
1. Make the Thai Peanut Chicken:
• In a bowl, whisk together soy sauce, peanut butter, honey, lime juice, sriracha, garlic, ginger, salt, and pepper.
• Add the chicken pieces to the bowl and toss until the chicken is fully coated. Let it marinate for at least 15-20 minutes.
• Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook for 5-7 minutes, turning occasionally, until the chicken is browned and cooked through. Remove from the skillet and set aside.
2. Make the Coconut Rice:
• In a saucepan, combine jasmine rice, coconut milk, water, and a pinch of salt. Bring to a boil.
• Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork. Keep warm.
3. Make the Mango-Avocado Salsa:
• In a bowl, combine the diced mango, avocado, red onion, cilantro, lime juice, salt, and pepper. Gently toss to combine and set aside.
4. Make the Chili Peanut Sauce:
• In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey, and warm water until smooth. Adjust the consistency by adding more water as needed.
5. Assemble the Bowl:
• Divide the coconut rice into bowls. Top with the Thai peanut-glazed chicken pieces and spoon the mango-avocado salsa over the top.
• Drizzle with the chili peanut sauce for extra flavor and spice.
6. Serve:
• Serve immediately and enjoy the fresh, spicy, and creamy flavors of this vibrant bowl!
