Crunchy Rainbow Veggie Rice Paper Rolls Perfect Light Snack 🌈🥢😋
Ingredients:
For the Spring Rolls:
8-10 sheets of rice paper wrappers
1 cup shredded purple cabbage
1 cup shredded green cabbage or lettuce
1 large carrot, julienned or shredded
1 red bell pepper, thinly sliced
1 cucumber, julienned
1/2 cup fresh mint leaves
1/2 cup fresh cilantro leaves
Optional: Cooked vermicelli noodles, cooked shrimp (halal), or thin tofu strips
For the Peanut Dipping Sauce:
1/3 cup (85g) creamy peanut butter
1/4 cup (60ml) warm water
2 tbsp (30ml) soy sauce or tamari
1 tbsp (15ml) maple syrup or agave nectar
1 tbsp (15ml) fresh lime juice
1 clove garlic, minced (or 1/2 tsp garlic powder)
1/2 tsp grated fresh ginger (or 1/4 tsp ground ginger)
Pinch of red pepper flakes (optional)
Directions:
1. Prepare Filling: Have all your shredded vegetables, herbs, and optional fillings prepped and arranged for easy assembly.
2. Prepare Dipping Sauce: In a small bowl, whisk together peanut butter and warm water until smooth. Whisk in soy sauce, maple syrup, lime juice, minced garlic, ginger, and red pepper flakes (if using). Add more warm water, 1 teaspoon at a time, if needed to reach desired dipping consistency. Set aside.
3. Soften Rice Paper: Fill a shallow dish (like a pie plate) with warm water. Submerge one rice paper wrapper in the water for about 15-30 seconds, just until it becomes soft and pliable (don't let it get too mushy). Carefully lift it out, letting excess water drip off, and lay it flat on a clean, damp work surface or cutting board.
4. Fill the Roll: Arrange a small amount of each filling (cabbage, carrot, bell pepper, cucumber, herbs, noodles/protein if using) horizontally across the lower third of the softened rice paper, leaving about an inch border on the sides. Don't overfill.
5. Fold: Fold the bottom edge of the rice paper up tightly over the filling. Fold the left and right sides inward over the filling.
6. Roll: Tightly roll the wrapper up from the bottom to form a compact spring roll.
7. Repeat: Repeat the process with the remaining rice paper wrappers and filling ingredients.
8. Serve: Serve the fresh rainbow spring rolls immediately with the peanut dipping sauce on the side.
